CHEESEMONGER - Nashville

 

Our cheesemonger should have a passion for cheese and share their passion and knowledge with guests as well as coworkers.  They will lead our Nashville cheese team in the areas of education and customer service.  Our cheesemonger will work closely with our Owner/Head Cheesemonger assisting in the ordering process.  They will prepare, package, receive and stock products.  

 

Job Description

 

  • Assist turophiles with cheese selections while sharing knowledge of a particular cheese.

  • Cut to order cheeses for turophiles weighing, labeling and packaging products as well as assist in checking out customers on our POS system.

  • Ensures cheese counters (and cheese fridges) are merchandised accurately and neatly as well as properly labeled and priced.  Rotates products per quality and FIFO inventory management (First In - First Out)

  • Works closely with Manager to ensure proper in-stock levels are maintained of cheeses.

  • Prepares pre-ordered cheeseboard orders and works with kitchen staff putting together event or table experiences. 

  • Assists kitchen staff in preparing cheese and charcuterie planches (boards)

  • Lead weekly cheese educational workshops.  Works closely with FOH Manager co-teaching about wine and cheese pairings. 

  • Serves cheese at local events, tastings and private events.

  • Follow safety and sanitation guidelines maintaining a clean and sanitized workstation.

 

General Requirements

 

  • Passion for cheese and desire to continue to learn more about our products.

  • One year of cheese experience is preferred but not required.

  • Basic knife skills, experience operating a slicer a plus

  • Availability to travel to other GREYS locations, trade shows and visit creameries for training. 

 

Compensation: Hourly, plus tips

Work week:  Tuesday - Saturday (off Sunday/Monday)

SOUS CHEF - Nashville

The Chef oversees all back of house operations, ensuring quality and food safety standards consistently met.  Our menu changes twice a year; spring/summer and fall/winter. We offer cheese bar specials allowing the chef opportunity to get creative. 

Job Description

  • Follow recipes set by the Executive Chef ensuring ingredients and final products are to GREYS standards. 

  • Assist Chef in the preparation of meal ingredients and plating dishes.

  • Assist Cheesemonger building cheese and charcuterie boards.

  • Maintain a clean and safe work environment to meet food safety and sanitation standards. 

  • Ensures that all federal, state, local and company regulations and standards for product freshness, safety, refrigeration, sanitation and weights and measures are met.

 

Requirements

 

  • Passion for cheese and desire to continue to learn more about our products.

  • One year of kitchen experience is preferred but not required.

  • ServSafe certified

  • Basic knife skills

  • Ability to work as part of a team with accountability to the dishes prepared.

  • Availability to travel to other GREYS locations, trade shows and visit creameries for training.

FRONT OF HOUSE, LEAD - Nashville

We are opening a cheese shop at Sylvan Supply.  Unique opportunity to work in Nashville’s only cut-to-order speciality cheese shop!  We love cheese and educating our turophiles (cheese lovers).  Our FOH Leader should have a passion for cheese and wine and share their passion with guests and our staff.  You will work alongside service and support staff to provide a great dining experience as well as an exceptional experience at our cheese counter, during private events or workshops.  You’re the face of our shop and responsible for our customers’ experiences!

 

What You'll Do . . .

Customer Service: Dine-In  - Workshops - Private Events

  • Prepare tables with special attention to sanitation and order

  • Greet, seat and serve dine-in customers

  • Send customer inquiries of special events to Operations Manager

  • Manage opening or closing activities (depending on shift)

  • Ensure the overall cleanliness of the store/restaurant

  • Work closely with BOH to provide seamless customer experience.

  • Assist with set up and tear down of events and workshops.

Customer Service: Cheese Counter

  • Cut, wrap, store and sell cheese.

  • Take cheese boards orders when customers call or purchase in store.

 

About You . . . 

 

  • Have a passion for cheese and desire to continue to learn more about our products.

  • Cheese experience is preferred but not required.

  • Follow health and safety guidelines.

  • Must be of legal age under TN state regulations to serve alcohol (18 years) and have a valid TN ABC certificate. 

Compensation: $12 - $16 hourly, based on experience (plus tips, roughly additional $6-$8/hr )

Work week:  Tuesday - Saturday (off Sunday/Monday) - shop hours 11 am - 8 pm
